I usually scrap the drumsticks and wings, and get what good dark meat I can out of the hips/thighs. Whatever your preference, you want to get all that stuff out of the way so you are just left with the main breast and body of the Turkey:

Then just slice the skin along the breast bone and start carefully carving the breast meat away from the breast bone. Hardest part of this separation is at the lower end of the body where the rib cage is. Once I get it almost fully separated stab the bottom center of the breast loaf with a large fork and finish he last of the cutting, it should come out looking like this:

Then take your electric knife and go to town, cutting across the grain:
